Deconstructed Philly Cheese Steak – THM S

The first time I made this I sliced the peppers and onions. While it tasted great the bigger pieces were hard to eat. Chopping the peppers and onions into bite-size pieces makes it much easier to eat.

Let’s get started. This only takes about 20 minutes to make. Chop the onions and peppers.

Heat the oil skillet and add the chopped peppers and onions to skillet.

Chop the roast beef.

Add the chopped roast beef to the sauteed peppers and onions. Stir. Mix in the cream cheese and the salt and nutritional yeast.

Stir until the cream cheese is melted and everything is creamy.

Add the Provolone cheese to the top. Cover for one minute until the cheese on top is melted. You could also put it under the broiler until it is golden brown, sizzling and bubbly.

Serve by itself, over chopped lettuce or rice cauliflower to stay on plan. For the family, serve over rice or in a bread roll.

Ingredients

  • 3-4 green peppers

  • 1 large onion

  • 2 Tablespoons Avocado or olive oil

  • 1 lb deli roast beef

  • 8 oz lite cream cheese

  • 1 tsp salt

  • 1/4 cup nutritional yeast

  • sliced Provolone cheese

Directions

  • Rough chop the peppers and onions.
  • Heat the oil in a large skillet. Add the peppers and onions. Saute 7-8 minutes till the onions are translucent and the peppers are starting to get soft. We don’t want them mushy.
  • While the peppers and onions are cooking, rough chop the roast beef.
  • Add the meat to the skillet when the peppers and onions are cooked. Stir.
  • Add the cream cheese, salt and nutritional yeast. Stir until the cream cheese is melted and everything is creamy.
  • Add several slices of the Provolone cheese to the top and cover the skillet for a minute until the cheese is melted.
  • Remove from heat and serve. For Trim Healthy Mamas you could serve plain or over chopped lettuce. For a growing family, serve over rice. You could add a side salad but there are lots of peppers in there to get your non starchies.
