Mom’s Pancakes

These pancakes have become legend in our family.  Mom used to make these for everyone, groups large and small.  We even had them when camping.  There is a story about beating the egg whites…

We used to separate the eggs and whip the egg whites but the pancakes are just as good and almost as fluffy this way.

Dry Ingredients:

Mix together in a large bowl.

  • 4 cups flour
  • 1/2 sugar
  • 5 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt

Wet Ingredients:

Add the following in this order mixing thoroughly after adding each ingredient.

  • 1 quart buttermilk
  • 6 eggs – slightly beaten – no, you do not have to whip the egg whites
  • 1 stick – 1/2 cup – melted butter – always add the butter last

Pour by 1/4 scoops onto a hot griddle.  Cook until bubbles appear on the top. If you flip them too soon, they will be gooey inside.  They cook longer on the first side than the second side.

Ready to turn

Flip until lightly browned on the second side.  Put on plate and eat right away with warmed syrup, applesauce, strawberries, strawberry syrup, blueberry syrup, whipped cream or any other topping that sounds good.

You will never want to have any other kind of pancake!

  • 5 teaspoons baking powder

  • 2 teaspoons baking soda

  • 1 teaspoon salt

  • Wet Ingredients:
