Really Good Spinach Salad
I didn’t say this was good for you. Or even that it was low-fat or low in calories. Because it isn’t. But it is really good. And sometimes you just have to have it.
You could cut down on the dressing and the bacon if you want to make it a little more healthy. (There are 71 calories in one tablespoon of dressing but only 25 calories in 1 tablespoon of bacon bits.)
First make the DRESSING and refrigerate.
Mix the following ingredients:
- 1/3 cup vinegar
- 1/3 cup ketchup
- 1/2 cup sugar
- 1 cup oil
You don’t really need to measure the following ingredients. Just use as much as you like.
SALAD INGREDIENTS:
- Spinach (the easiest way to buy spinach is get pre-washed baby spinach)
- Bacon (you can fry it and crumble it or just use the Hormel Real Bacon Bits – don’t use imitation bacon bits..ever)
- Hard-boiled eggs, grated – 1 per salad
OPTIONAL INGREDIENTS:
- Sliced water chestnuts
- Bean sprouts
- Strawberries
Toss the salad ingredients with as much dressing as you like. Enjoy.

- For the salad: Add the spinach, bacon bits and sliced eggs to a large bowl. You don’t really need to measure these ingredients. Just use as much as you like.
- Add any optional ingredients.
- Toss the salad ingredients with as much dressing as you like. Enjoy.
